What's with this avocado toast trend? I don't know, but I'm officially on board. I recently had my first toast dose at
Pizza East inside
Soho House Chicago and have been hooked ever since. Their version features crusty bread topped with chopped avocado, greens, chili flakes, and a poached egg.

I thought I'd try my hand at recreating Pizza East's version for Saturday brunch at home. The verdict? It was pretty damn good. Believe it or not, this was the first time I tried poaching an egg (I had to Google a how-to video!). The first attempt was a total fail, but the second attempt was perfection. I may have burned myself, but it was worth it.
The BF has turned into somewhat of an artisan bread maker and luckily we had some of his homemade bread on hand for me to use. There's nothing better than fresh bread, but you can certainly use any type you have. The crustier the better!

I chopped up an avocado into cubes, tossed it with a little olive oil, and sprinkled some red pepper flakes on top. After toasting the bread, I brushed a tiny bit of olive oil on the bread, and then placed my avocado mixture on top. All that's left to do is to place your egg on top, add a dash of sea salt and pepper, and a squeeze of lemon if you prefer. I love the way the lemon brightens up the creaminess of the avocado. Once you cut into your poached egg, the yolk oozes all over the avocado creating the most wonderful blend of textures, colors, and flavors. It's a simple, nutritious way to start your day! Who says you can't have restaurant-quality brunch at home?

Avocado Toast
Serving Size: 1
Ingredients:
1 piece of bread, toasted
1/2 a ripe avocado
1 tsp olive oil + a bit more for brushing on your toast
1 tsp red pepper flakes (or more if you like it spicy!)
Pinch of sea salt or kosher salt
Pinch of black pepper
1-2 lemon wedges
Directions:
1. Toast your bread
2. While your bread is toasting, poach your egg (check out a how-to video
here)
3. Chop 1/2 a ripe avocado into cubes and place in a mixing bowl
4. Add 1 tsp olive oil and 1 tsp red pepper flakes to your bowl and toss gently to coat
5. Brush your toasted bread with olive oil
6. Add your avocado mixture on top of your toast, and then your poached egg
7. Sprinkle salt and pepper on top of your egg
8. Squeeze lemon on top and enjoy!
