A Peachy Dinner for Two

You know that feeling when you get home and the last thing you want to do is think about what you're having for dinner? Well, I've been there, and that usually results in me popping a frozen Boca burger in the microwave. I was introduced to an Atlanta-based start up that is taking the planning and hassle out of having to plan a meal. PeachDish delivers a box of fresh, pre-portioned ingredients to make a meal for two people, all for just $20. I received the ingredients for my meal in a nice box that was insulated to keep everything fresh. I even waited three days after my PeachDish box arrived to make my meal and everything was still in perfect condition.

The week I received my order, the menu called for a three course dinner full of rustic foods. I decided to whip up the entire thing on a Sunday before the BF arrived home. To start, we had a sweet pepper and feta salad with chopped bell peppers, feta, lemon, and parsley. This salad was so delish and easy, that the BF made it the next week on his own. It also makes for the perfect dish to bring to a party.

Chop your bell peppers for the salad
Chop some parsley
Combine peppers, parsley and feta in a large bowl
Squeeze in juice from half of a lemon and add salt and pepper to taste
Mix together and place in a serving dish
Next, we had Italian-stuffed chicken with burst tomato pasta. I had never made stuffed chicken breasts before but this was a great way to spice up an ordinary chicken recipe. The chicken was stuffed with garlic, basil, and pecorino romano cheese. I was a little skeptical that the pasta would have enough flavor without sauce, but the combination of olive oil and roasted tomatoes was pefect, especially because the chicken had intense flavor from the cheese.

Chop the basil and garlic
Place chicken breasts in a plastic bag and flatten with the bottom of a pan or meat tenderizer if you have one
Sprinkle pecorino romano cheese, garlic, and basil on chicken
Roll chicken breasts and secure with a few toothpicks
Saute cherry tomatoes in olive oil until they pop
Place pasta in boiling water until cooked to your desired texture
Add pasta to pan with 1/4 cup of cooking water and parsley
Our third and final course was a simple one; oven-roasted plums with shortbread cookies. I never eat plums so this was a nice change! It was super convenient to roast the plums in the oven while we were eating the first and second courses as well.

Cut plums into quarters and bake in already-heated oven until soft
Crumble shortbread cookies over plums and enjoy for dessert!

We had a fantastic meal from start to finish and the effort put in was very minimal. The directions that came with the meal were very easy to follow, and it was nice that they were listed in a way that allowed you to prepare all three courses at once.
